Lookup predefined values are not currently displayed in publisher actions in the user interface (though the predefined value works fine elsewhere, like in Salesforce1)
1. On an action set a predefined value for a lookup field (e.g. Opportunity.Account).
2. Make sure the field is on the action layout.
3. Add the action to the page layout.
At runtime, note that the predefined value is not populated when the action is viewed in Aloha or in one.app. However, it is populated correctly in Salesforce1 on iOS.
If the field with the predefined value is not added to a layout, but rather is set in the background, then the value is set correctly.
The workaround is not to include the field on the layout.
