Error message while saving UI Settings when multi-currency is activated and only 1 currency is defined

When Multi-Currency is enabled and only one currency is selected, users may see an error when trying to edit the User Interface settings.
Only select one Currency
Go to the User Interface settings under Customize
Try to edit and Save > You may see an error.
Add one more currency and the UI settings should be able to be edit/saved
