Email Publisher does not parse emails with apostrophes correctly in Case Feed

If a contact has an email address with an apostrophe in it (eg: Test.O'Test@salesforce.com), the case feed email publisher does not parse it correctly.
1. Set a contact's email address to include an apostrophe, like Test.O'Test@salesforce.com.
2. Create a case under that contact.
3. Open up the case feed, click on "Email" for the quick publisher action, and expand up the email parameters (From, To, CC, BCC, Subject, etc) section.
You'd need to use the case detail or contact detail to send email
