At present, it is possible to write Apex triggers on SurveyResponse, but due to lack of DML support of this entity, it is not possible to test this type of trigger, which prevents deploying them into production as Apex triggers must meet minimum 1% code coverage requirement.

When sending a survey, the email address in the FROM is correct but the Name is not. It is showing the full name of the logged in rather than the designated Name from My.Email Settings in Personal Settings.
