Thank you for your continued feedback and support of this idea. Our team still has this on our long-term roadmap, however we're currently working on other priorities like performance enhancements and modernizing List Views to use Lightning Web Components (LWC). Our focus on moving highly-used components to LWC is in support of improving speed in the Lightning experience, which is another top idea (https://success.salesforce.com/ideaView?id=08730000000cJpFAAU). Salesforce please continue to work on this, since what I'm about to suggest only applies in a limited number of use cases, but I was finally able to get some of my lists to default to the order I wanted!
I ended up creating a picklist field and then copying all the values of the column I wanted sorted to be picklist options. Since you can set the order of picklist options, I ordered them they way I had wanted it, set my new picklist field as the first field of the list view and it default sorted based on the order of the picklist options.
Hopefully this is helpful to others while we continue to wait for this to be released as a feature.
